Stuffed Fig Recipe

<--Before grilling.

Cut stems from the tops of ripe figs. With the tip of a knife make an opening in the fig. Place a chunk of blue cheese – we like using a Cambozola as it melts so beautifully – into the opening. Wrap the fig with a slice of prosciutto and refrigerate until ready to cook. Heat grill and place figs directly over flames to crisp up the prosciutto and melt the cheese. Place onto individual serving plates and drizzle with a good Balsamic vinegar. We like this with the new 2006 Pinot Noir (available only at the tasting room). The smoky flavors from grilling meld with the sweetness of the fig and the savory blue cheese, mimicking the layers of flavors in the Pinot Noir.
